Measure and combine

Chill a coupe or Nick & Nora glass by filling it with ice and set aside. In a mixing glass combine 2 oz Altos Reposado tequila, 0.5 oz Amaro Nonino, 0.75 oz amber vermouth, 0.5 oz amontillado sherry, 0.5 oz verjus, and 2 dashes orange bitters.

Add ice and stir

Fill the mixing glass with enough ice to come up near the top (about 1 cup). Stir gently and consistently for 30–45 seconds (roughly 20–30 full strokes) until the cocktail is well chilled, properly diluted, and the mixing glass registers cold to the touch.

Prepare glass

Dump the ice from the chilled serving glass and, if desired, strain a little of the stir ice over the rim to add chill. Double-strain the mixed cocktail through a Hawthorne or julep strainer and a fine mesh strainer into the chilled coupe or Nick & Nora to remove any small ice shards.

Garnish

Express orange oils

Take one piece of orange zest and hold it skin-side down over the finished cocktail. Give it a sharp twist to express the oils across the surface of the drink, then rub the rim with the peel and drop it into the glass.

Add crunch accent (optional)

For an Ode To Crunch visual and textural accent, rest a dehydrated orange wheel on the rim or balance a crisped tortilla chip on the glass edge. If using a chip, choose a thin, sturdy crisp to avoid breakage; do not submerge into the drink.
