Lamb Michigan Sauce

Cook the Lamb

In a large skillet, cook the ground lamb over medium heat until browned. Drain excess fat.

Add chopped onion and minced garlic to the skillet, cooking until the onion is translucent.

Combine Ingredients

Stir in tomato sauce, brown sugar, apple cider vinegar, chili powder, salt, and black pepper. Simmer for 20 minutes.

Pitchfork Kraut

Mix Ingredients

In a large bowl, combine shredded cabbage, grated carrot, salt, and caraway seeds.

Ferment

Press the mixture into a jar, ensuring it’s compact. Allow it to ferment at room temperature for 3-5 days, then add apple cider vinegar and mix.

House Made Mustard

Soak Mustard Seeds

In a bowl, combine yellow mustard seeds, apple cider vinegar, and water. Let soak for 24 hours.

Blend and Season

After soaking, blend the mixture until smooth. Stir in salt and honey to taste.

Assembly

Cook Hot Dogs

Grill or boil the hot dog sausages according to package instructions.
