Pork Loin Preparation

Season and Roast the Pork

Preheat the oven to 200°C (400°F). Rub the pork loin with olive oil, salt, black pepper, garlic powder, and onion powder. Place the pork on a roasting rack and roast for about 25-30 minutes per 500g, or until the internal temperature reaches 65°C (145°F). Let it rest for 10 minutes before slicing.

Broccolini Preparation

Sauté the Broccolini

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the broccolini, season with salt and pepper, and sauté for about 5-7 minutes until tender.

Make the Hoagie Rolls

In a large bowl, combine warm water, sugar, and yeast. Let it sit for 5 minutes until foamy. Add flour, salt, and olive oil. Mix until a dough forms. Knead for about 10 minutes, then let it rise in a warm place for 1 hour. Divide the dough into portions, shape into rolls, and let rise again for 30 minutes. Preheat the oven to 220°C (425°F) and bake for 15-20 minutes until golden brown.

Assemble the Roast Pork Sub

Slice the hoagie roll and layer with sliced pork loin, sautéed broccolini, giardiniera, a drizzle of chili oil, and a spread of mostarda. Serve immediately.
