In a large brew kettle, combine the pale malt, caramel malt, and Munich malt with 10 cups of water. Heat to 150°F (65°C) and maintain this temperature for 60 minutes.

Mashing

After mashing, sparge the grains with an additional 5 cups of hot water to collect the wort.

Sparging

Bring the wort to a boil. Add the Cascade hops and boil for 60 minutes. Add Fuggle hops in the last 10 minutes of the boil.

Boiling

During the last 5 minutes of the boil, add the coriander seeds and orange peel.

Flavoring

Cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F (21°C).

Cooling

Transfer the cooled wort to a sanitized fermentation vessel. Add the yeast and honey, then seal with an airlock. Ferment for about 2 weeks at room temperature.

Fermentation

Once fermentation is complete, bottle the beer with priming sugar (if desired) and let it carbonate for another 2 weeks.

Bottling

After carbonation, chill the beer and enjoy your homemade Wunderkammer Bier!
