Preparation

Roast the Carrots

Preheat the oven to 400°F (200°C). Peel and chop the carrots into small pieces. Toss them with a little olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 25 minutes or until tender. Let cool, then blend until smooth to make a purée.

Make the Honey-Vanilla Yogurt

In a bowl, mix the plain yogurt with honey and vanilla extract until well combined. Set aside.

Prepare the Granola

In a mixing bowl, combine rolled oats, nuts (if using), cinnamon, and a pinch of salt. Spread the mixture on a baking sheet and bake at 350°F (175°C) for about 15-20 minutes, stirring occasionally until golden brown. Let cool.

Assemble the Dish

In serving bowls, layer the honey-vanilla yogurt, roasted carrot purée, chopped oranges, and grapes. Top with homemade granola and serve immediately.
