Prepare the Brown Butter Aioli

In a small saucepan, melt the unsalted butter over medium heat. Continue cooking until the butter turns golden brown and has a nutty aroma, about 5-7 minutes. Be careful not to burn it.

Make the Aioli

In a bowl, combine the brown butter, mayonnaise, lemon juice, Old Bay seasoning, salt, and black pepper. Mix until smooth and well combined. Stir in the chopped chives and set aside.

Prepare the Lobster

If using whole lobster, cook the lobster in boiling salted water for about 8-10 minutes, then remove from the pot and cool. Remove the meat from the shells and chop into bite-sized pieces. If using pre-cooked lobster, simply chop the meat.

Combine Lobster with Aioli

In a large bowl, gently combine the lobster meat with the brown butter aioli. Add more salt and pepper to taste if necessary.

Toast the Challah Rolls

Preheat your grill or a skillet over medium heat. Lightly butter the outside of each challah roll and toast them until golden brown on both sides.

Assemble the Lobster Rolls

Fill each toasted challah roll generously with the lobster mixture. Optionally, garnish with additional chives.

Serve

Serve the lobster rolls immediately with a side of chips or salad.
