Chill flute

Place a Champagne flute or coupe in the refrigerator or fill with ice water to chill while you prepare the cocktail.

Measure and combine

In a cocktail shaker, add 1.5 oz gin, 0.75 oz freshly squeezed lemon juice, 0.5 oz apricot liqueur, and 0.25 oz simple syrup.

Add ice and shake

Fill the shaker with ice (about 1 cup) and shake vigorously for 10–15 seconds until the shaker feels very cold. This chills and slightly dilutes the mixture for balance.

Strain

Discard ice or water from the chilled flute. Double-strain the shaken mixture into the chilled flute using a Hawthorne strainer and a fine mesh strainer (or just a fine strainer) to catch ice shards and pulp.

Top with sparkling wine

Carefully top the glass with 3 oz well-chilled Prosecco, pouring gently down the side to preserve bubbles and avoid a foamy overflow. Do not shake or stir after adding the sparkling wine.

Garnish and serve

Express a lemon twist over the glass to release the oils, rim the glass with the twist if desired, then drop it into the drink as a garnish. Serve immediately.
