Rim the glass

Select a chilled coupe or martini glass. Run a lemon wedge around the outer edge of the rim (optional: the inside rim if you prefer). Put the granulated sugar on a small plate, then gently dip the moistened outer rim into the sugar to coat. Set the glass aside.

Mix the cocktail

Add 2 oz St. Remy VSOP, 1 oz Cointreau, 0.75 oz fresh lemon juice, and 0.25 oz simple syrup (optional) into a cocktail shaker.

Fill the shaker with the large ice cubes (about 4 cubes) to properly chill and dilute the drink.

Dry shake is not necessary. Secure the shaker tin and shake vigorously for 12–15 seconds, until the outside of the shaker is well chilled and slightly frosted. This gives proper dilution and a cold, silky texture.

Double-strain (using a Hawthorne strainer and a fine mesh strainer) into the prepared chilled coupe/martini glass to remove tiny ice shards and any pulp from the lemon juice.

Finish & serve

Express the oils from a lemon twist over the cocktail (hold the twist over the surface and give it a quick squeeze) and drop it in, or float a lemon wheel on the edge of the glass.

Serve immediately. The estimated drinking temperature is very cold; the sugar rim adds a contrasting sweetness to the bright citrus and warm brandy.
