Method
Prep & Chill
Place a small serving bowl or ramekin inside a larger bowl of ice to create a chill bed for the caviar. This keeps the caviar cool during service. Ensure the caviar tin or jar is chilled in the refrigerator until just before serving.
Remove caviar from refrigerator just before plating. Keep the tin closed until you are ready to serve to preserve aroma and temperature.
Warm Blini & Toasts
If using store-bought or prepared blini, warm them gently in a skillet over low heat with a thin smear of the softened butter (about 1 tsp total). Warm each side 20–30 seconds until just heated — do not crisp or brown heavily. Alternatively, warm slices of toasted brioche briefly in a 300°F (150°C) oven for 3–5 minutes.
Arrange warmed blini or toasts on a chilled serving platter so they are ready when the caviar is set on the table.
Assemble & Serve
Spoon the Crème Fraîche
Place a small spoonful (about 1/2 tsp) of crème fraîche in the center of each blini or toast. This provides a creamy, slightly tangy base that complements the caviar.
Portion the Caviar
Using a mother-of-pearl or other non-metallic spoon, gently portion approximately 1/6–1/4 oz (about 8–12 grams) of Osetra caviar onto the crème fraîche-topped blini. For 2 oz total, this yields about 12 blini servings at ~0.17 oz (5 g) each or 6 larger portions at ~0.33 oz (10 g) each — adjust to taste and occasion.
Garnish
Lightly sprinkle each topped blini with a few snips of fresh chive. If using, add a small pinch (a few crystals) of finely diced red onion/shallot to one side of the caviar for a bit of texture and sharpened flavor. Offer lemon wedges at the side; a single, very light squeeze of lemon is optional — do not over-acidify or mask the caviar's flavor.
Serve immediately with the chilled caviar tin placed on the ice bed. Provide extra crème fraîche, blini/toasts, and a non-metallic spoon so guests can help themselves. Keep the caviar cool and consume within 1–2 hours after opening for best quality.
