Prep

Prepare glass

Rub a lime wedge around the rim of an old-fashioned or rocks glass. Dip the rim into smoked salt so it adheres evenly. Set glass aside.

If using fresh pineapple chunks, lightly muddle 2 pineapple chunks in a shaker to release juices and aroma.

Mixing

Add the muddled pineapple (or 2 oz fresh pineapple juice if not muddling), 2 oz tequila, 0.5 oz smoked mezcal (optional), 0.5 oz agave syrup, and 0.75 oz fresh lime juice into a cocktail shaker.

Add 2 dashes of bitters and fill the shaker with ice (enough to chill thoroughly).

Shake vigorously for 12–15 seconds until the shaker becomes frosty and well-chilled.

Strain & Serve

If you muddled pineapple, double-strain the cocktail into the prepared glass over fresh crushed ice or a large ice cube to remove solids. If you used only juice, fine-strain or pour directly over fresh ice.

Give the drink a gentle stir to integrate.

Garnish with a pineapple wedge on the rim and optionally char a rosemary sprig briefly over a flame or torch and place it in the drink for an aromatic smoky finish.
