Prepare the Potatoes
Peel and cut the potatoes into cubes. Boil them in salted water for about 10-15 minutes until tender. Drain and set aside.
Cook the Sausages
In a large skillet, heat olive oil over medium heat. Add the butifarra sausages and cook until browned on all sides, about 8-10 minutes. Remove them from the skillet and set aside.
Make the Garlic Sauce
In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Pour in the white wine, scraping up any browned bits from the bottom of the pan. Let it simmer for 5 minutes.
Combine Ingredients
Return the sausages to the skillet, add the cooked potatoes, and stir to combine. Season with salt, black pepper, and sprinkle with fresh parsley. Cook for an additional 5 minutes to heat through.
Serve
Serve hot, garnished with additional parsley if desired.
