In a large skillet, heat the olive oil over medium heat. Add the chorizo pieces and cook until browned, about 5-7 minutes.

Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 4-5 minutes.

Pour in the red wine, scraping the bottom of the pan to release any browned bits. Bring to a simmer.
