Cauliflower Steak

Preparation

Prepare Cauliflower Steaks

Preheat your oven to 425°F (220°C). Remove the leaves from the cauliflower and cut the head into thick slices (about 1-inch thick) to create steaks. Brush both sides of the steaks with olive oil and season with salt and pepper.

Roast Cauliflower

Place the cauliflower steaks on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes, flipping halfway through, until golden brown and tender.

Make Garlic Butter

In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Remove from heat and set aside.

Prepare Romesco Sauce

In a food processor, combine Marcona almonds, roasted red peppers, tomato paste, red wine vinegar, paprika, olive oil, salt, and black pepper. Blend until smooth. Adjust seasoning to taste.

Serve

Drizzle the garlic butter over the roasted cauliflower steaks and serve with a generous spoonful of Marcona almond romesco sauce on top.
