Prepare the base

In a large paella pan or a wide skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until the onion is translucent.

Add peppers and tomato

Stir in the diced red bell pepper and the diced tomato. Cook for about 5 minutes until the vegetables soften.

Incorporate seafood and noodles

Add the calamari and shrimp to the pan, cooking for another 3-4 minutes until the shrimp turn pink. Then, add the fideo noodles and stir to combine.

Add liquid and seasonings

Pour in the fish stock (or water), then add the squid ink, paprika, saffron, salt, and pepper. Stir well to ensure the noodles are evenly coated.

Cook the fideuà

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 10-12 minutes, or until the noodles are cooked and have absorbed most of the liquid.

Final touches

Remove from heat and let it sit covered for an additional 5 minutes. Fluff the noodles with a fork before serving.
