Prepare the Potatoes

Peel the potatoes and cut them into thin slices or small cubes. Rinse under cold water to remove excess starch, then dry with a kitchen towel.

Fry the Potatoes

In a large skillet, heat the olive oil over medium heat. Add the potatoes and season with salt. Fry until they are golden and crispy, about 15-20 minutes, stirring occasionally.

Cook the Eggs

In a separate pan, fry the eggs sunny-side up in a bit of olive oil. Cook until the whites are set but the yolks are still runny, about 3-4 minutes.

Add the Ham or Sausage

If using Serrano ham, cut it into strips and add it to the potatoes for the last few minutes of cooking. If using Chistorra sausage, slice it and cook it in a separate pan until browned, then mix it with the potatoes.

Assemble the Dish

Place the fried potatoes on a serving plate, top with the fried eggs, and add the ham or sausage. Season with black pepper to taste.
