Cook the lentils
Place rinsed lentils and 3 cups water in a medium saucepan. Bring to a gentle boil, then reduce to a simmer. Skim any foam, cover partially, and cook until tender but still holding shape, about 20–25 minutes. Taste for doneness — they should be tender with a slight bite. Drain any excess water and transfer lentils to a large bowl to cool slightly.
While the lentils cook, prepare the apple, shallot, celery, herbs, and nuts. Combine the diced apple, minced shallot, sliced celery, chopped parsley, chives, and toasted nuts in a mixing bowl.
When lentils are warm but not hot, fold them into the apple-herb mixture. Gently toss to combine so the lentils absorb some dressing later. Season with 1 tsp sea salt and 1/2 tsp black pepper, but hold final seasoning until after dressing is added.
If using goat cheese or feta, crumble it over the lentil mixture now and gently fold to distribute.
Burnt Tomatoes (Tomates Brûlées)
Preheat a small cast-iron skillet or heavy sauté pan over medium-high heat until very hot (1–2 minutes). Add 1 tablespoon olive oil and swirl to coat.
Add halved cherry tomatoes cut-side down in a single layer. Let them cook undisturbed until the cut sides blister and darken (char slightly) about 2–3 minutes. Press gently with a spatula to increase contact for more char, if desired.
Toss tomatoes, add 1 tsp balsamic vinegar, smoked paprika (if using), and 1/4 tsp fine sea salt. Cook another 30–60 seconds just to warm the vinegar and coat the tomatoes. Remove from heat and let cool slightly.
Dressing
In a small bowl or jar, combine 3 tbs extra-virgin olive oil, 1.5 tbs white wine vinegar (or lemon juice), 1 tsp Dijon mustard, 1 tsp honey (or maple), minced half garlic clove (if using), 1/2 tsp salt, and 1/4 tsp black pepper.
Pour about two-thirds of the dressing over the warm lentil-apple mixture so it soaks into the lentils; reserve the rest to dress plates or top later. Toss gently to combine.
Finish & Serve
Scatter the warm burnt tomatoes over the dressed lentils. If any juices accumulated in the tomato pan, spoon a little of that flavorful oil/vinegar over the salad.
Serve the Salade de Lentilles Vertes slightly warm or at room temperature. Leftovers keep refrigerated in an airtight container for up to 3 days; bring to room temperature before serving.
