Measure and combine
Pour 2 oz gin, 0.75 oz fresh lemon juice, 0.5 oz simple syrup, and 0.5 oz egg white (if using) into a cocktail shaker.
Dry shake
Without ice, seal the shaker and shake vigorously for 15–20 seconds to emulsify the egg white and build a frothy texture.
Wet shake
Open the shaker, add a large handful of ice, reseal and shake vigorously for another 12–15 seconds to chill and slightly dilute the mixture.
Double-strain the chilled mixture through a fine mesh strainer into a chilled highball or Collins glass filled halfway with fresh ice. If you prefer the classic fizz presentation, strain into a chilled Collins glass without ice.
Finish
Top with sparkling wine
Slowly top the shaken base with about 3 oz dry sparkling wine, pouring gently down the side of the glass so the fizz lifts the foam but doesn't overflow.
Garnish and serve
Express a lemon twist over the drink to release oils, rub the rim with the peel if desired, then drop the twist onto the surface. Serve immediately while effervescent.
