Wash and Chop Greens

Thoroughly wash the romaine lettuce and spinach under cold water. Dry them using a salad spinner or clean kitchen towel. Chop the romaine into bite-sized pieces and roughly chop the spinach. Place them in a large salad bowl.

Prepare Vegetables

Cut the cherry tomatoes in half and add them to the bowl with the greens. If using frozen corn, thaw it under warm water, then drain. If using canned corn, drain it and rinse. Add the corn to the salad bowl along with the black beans and diced green chiles.

Chop Toppings

Dice the avocado and add it to the bowl. Chop the cilantro and add it as well.

Shred Cheese

If not using pre-shredded cheese, shred the cheddar cheese and set aside for later.

Salad Assembly

Combine Ingredients

In the large salad bowl, gently toss together the greens, vegetables, and avocado until evenly mixed.

Add Cheese and Seasoning

Sprinkle the shredded cheddar cheese over the top of the salad. Drizzle the olive oil and lime juice over the salad. Season with salt and black pepper to taste.

Toss to Combine

Using salad tongs or two large spoons, gently toss the salad again to ensure the cheese, oil, and seasoning are evenly distributed throughout the salad.

Serve

Divide the salad into serving bowls or plates and enjoy immediately.
