Burrito Preparation

Prepare the Filling

In a bowl, mix the refried beans with half of the shredded cheese. This will be the filling for your burrito.

Assemble the Burrito

Lay a flour tortilla flat on a plate. Spoon the bean mixture onto the center, add chopped lettuce, sour cream, and salsa. Sprinkle the remaining shredded cheese on top.

Roll the Burrito

Fold in the sides of the tortilla and then roll it tightly from the bottom up to enclose the filling.

Prepare the Filling

In a mixing bowl, combine the shredded chicken and chopped onions. Mix well to combine.

Assemble the Enchiladas

Take a corn tortilla and place a few tablespoons of the chicken mixture in the center. Roll the tortilla around the filling and place it seam-side down in a baking dish. Repeat with the second tortilla.

Add Sauce and Cheese

Pour the enchilada sauce evenly over the top of the rolled tortillas. Sprinkle the shredded cheese and chopped cilantro over the sauce.

Bake

Preheat the oven to 350°F (175°C). Bake the enchiladas for about 20 minutes, or until the cheese is melted and bubbly.
