Flip the quesadilla and cook for another 3-4 minutes until the cheese is melted and the other side is golden brown.

Remove from skillet and cut into wedges. Serve with sour cream and salsa on the side.

Enchiladas

Prepare the Enchiladas

Preheat your oven to 350°F (175°C).

Warm the corn tortillas in a skillet over low heat to make them pliable.

In a separate bowl, mix shredded chicken with a portion of the red enchilada sauce.

Take a warmed tortilla, fill with the chicken mixture, and roll it up tightly.
