Prep the Seafood

Rinse the shrimp and scallops under cold water. Pat them dry with paper towels. If the shrimp are whole, peel and devein them.

Chop the Vegetables

Slice the bell peppers and onion into thin strips. Mince the garlic cloves.

Cook the Seafood

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the shrimp and scallops, season with salt, black pepper, chili powder, cumin, and paprika. Cook for about 3-5 minutes until the shrimp is pink and opaque, and the scallops are slightly caramelized. Remove from the skillet and set aside.

Sauté the Vegetables

In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell peppers and onion. Sauté for about 5 minutes until they are tender. Add the minced garlic and cook for an additional minute until fragrant.

Combine Seafood and Vegetables

Return the cooked seafood to the skillet with the vegetables. Stir everything together and cook for another 2-3 minutes to combine the flavors.

Assemble the Fajitas

Warm the flour tortillas in a dry skillet or microwave. Spoon the seafood and vegetable mixture onto each tortilla. Squeeze fresh lime juice on top and garnish with chopped cilantro.
