Prepare glass

Select a large wine glass. Fill the glass three-quarters full with ice cubes so the glass is cold and the drink will remain chilled.

Add Aperol

Pour 3 tablespoons (about 45 ml) of Aperol over the ice. Pour gently to avoid splashing.

Add Prosecco

Slowly add 90 ml of chilled Prosecco. Pour over the back of a spoon or down the side of the glass to preserve CO2 and create a layered look.

Top with soda

Add 30 ml chilled soda water to top the drink. Adjust the amount by ±15 ml if you prefer it slightly drier or lighter.

Stir gently

Using a bar spoon, stir the mixture gently once or twice to combine Aperol, Prosecco and soda without losing too much effervescence.

Garnish and serve

Place one fresh orange slice on the rim or dropped into the glass as garnish. Serve immediately while cold and fizzy.
