Method
Lobster
Prepare steaming liquid and pot
Fill a large, heavy-bottomed pot with 4 liters of water. Add 2 tablespoons coarse sea salt and 2 bay leaves. Bring to a rolling boil over high heat with the lid on.
Humanely handle lobsters
Keep lobsters chilled until ready to cook. To minimize stress, place each lobster in the freezer for 5–8 minutes prior to cooking to sedate them slightly. Handle carefully by the body.
Steam lobsters
When the water is boiling, place a steamer insert or a rack in the pot so lobsters sit above the water. Quickly place the lobsters headfirst onto the rack (do not overcrowd; steam in two batches if needed). Cover the pot tightly and steam: for 1.5–2.0 lb lobsters, steam 9–11 minutes for the first lobster and add 3 minutes for the second if cooking back-to-back. The shells will turn bright red and internal temperature should reach 50–55°C (122–131°F) for moist meat; if preferred well done cook to 60°C (140°F).
Rest and split
Remove lobsters with tongs to a tray. Let rest 3–4 minutes. Using kitchen shears, split the tails and crack claws to make the meat accessible for plating and eating. Keep warm while finishing other components.
Kumquat Sauce
Prepare kumquats
While water is coming to a boil, halve the kumquats and remove visible seeds. Reserve a few halves for garnish.
Cook and blend sauce
Place the halved kumquats in a small saucepan with 1 teaspoon neutral oil and a pinch of salt over medium heat. Cook, stirring, 3–4 minutes to soften and release juices. Add 2 tsp light soy sauce, 1 tsp rice vinegar, 1 tsp honey and 1 tsp grated ginger. Bring to a gentle simmer for 1–2 minutes, then remove from heat and let cool slightly. Transfer to a blender or use an immersion blender; puree until smooth. Taste and adjust seasoning — add a touch more honey if too tart or a few drops of water to loosen.
Finish sauce
Strain sauce through a fine-mesh sieve if you prefer a silkier texture. Keep warm or at room temperature; this bright, slightly tangy-salty-sweet sauce will be used as a dipping sauce and a spooned garnish for the lobster.
Charred Cucumber
Prepare cucumbers
Trim the ends of the cucumbers. Leaving the skin on, slice them lengthwise into quarters or into 1/2-inch (1.2 cm) thick rounds if preferred; quarters char nicely and present well.
Char cucumbers
Heat a heavy cast-iron skillet or grill pan over medium-high heat until very hot. Brush the cucumber pieces with 1 tablespoon olive oil. Working in batches, place cucumbers in the dry hot pan and press lightly to contact the surface. Cook without moving 2–3 minutes per side until deep char marks form and the flesh softens slightly. Flip and char the other sides. Total cook time per piece will be about 4–6 minutes depending on thickness.
Season and finish
Transfer charred cucumber to a bowl. Immediately sprinkle with 1 teaspoon coarse sea salt, 1 teaspoon freshly ground black pepper and drizzle 1 teaspoon toasted sesame oil. Toss gently. Garnish with chopped chives if using. Keep at warm room temperature for plating.
