Prepare trout

Pat the trout fillets dry with paper towels. Mix the coarse sea salt, granulated sugar and cracked black pepper in a small bowl. Lightly score the skin side of the fillets in a single shallow pass (don’t cut through). Rub the salt-sugar-pepper mix evenly into the flesh side only, then let sit skin side down in the refrigerator for 20 minutes to draw a little moisture and season the flesh.

Rinse and dry

After 20 minutes, quickly rinse the cure off under cold running water, gently blot the fillets dry very thoroughly with paper towels. Brush the skin lightly with 2 tbs olive oil to help prevent sticking and promote even smoke contact.

Preheat smoker or stovetop smoking setup

If using a cold/smoker box or electric smoker, preheat to 80–90°C (175–195°F) for warm smoking. For stovetop smoking, line a heavy-bottomed pot with a small rack and place soaked, drained wood chips on the bottom covered by foil with a few holes; fit the pot lid or a large dome. Heat gently until the chips begin to smolder and produce smoke (medium-low heat). Maintain a stable low temperature so the fish warms and absorbs smoke without cooking quickly.

Warm smoke the trout

Place fillets skin-side down on the smoker rack or on a perforated tray. Smoke for 15–30 minutes depending on thickness and smoker temperature; target internal flesh temperature of 45–55°C (113–131°F) — flesh should be opaque and flake slightly but remain moist. Check after 15 minutes; add more chips as needed to maintain smoke. Remove when warmed through and smoky but not fully flaky-dry.

Rest

Transfer smoked fillets to a tray and let rest 5 minutes at room temperature. Leave skin on for presentation or gently remove if preferred. Flake the trout into large pieces with a fork or slice into serving portions.

Verjus–Fine Herbs Emulsion

Prepare aromatics

Finely mince the shallot and chop all herbs (chives, parsley, tarragon). Keep herbs chilled until assembling the emulsion.

Make the emulsion base

In a medium bowl, whisk together the egg yolk, Dijon mustard and verjus until smooth and slightly thickened. Slowly begin to drizzle in the extra-virgin olive oil a few drops at a time while whisking vigorously to form a stable emulsion. Once the mixture begins to thicken, you can add the oil in a thin steady stream until fully incorporated.

Finish and season

Fold in the minced shallot and chopped herbs. Season with sea salt and freshly ground black pepper. If the emulsion is too thick, whisk in up to 1 tablespoon cold water to reach a pourable but creamy consistency. Taste and adjust salt, pepper or verjus acidity as needed. Keep refrigerated briefly if not using immediately; bring to cool room temperature before serving with warm trout.

Notes on safety

This emulsion uses a raw egg yolk. For safety, use pasteurized eggs if preferred or keep refrigerated and consume promptly.

To Finish & Serve

Plate

Arrange warm smoked trout pieces on warmed plates or a serving platter. Spoon verjus–fine herb emulsion over the trout in small pools or a light ribbon so the smoke remains the dominant flavor.

Garnish

Scatter microgreens or baby watercress around the fish, sprinkle a pinch of flaky sea salt and a little freshly cracked black pepper, and serve with lemon wedges for brightness.

Serve

Serve immediately while the trout is warm so the emulsion melds with the smoky flavor. Leftovers can be refrigerated up to 24 hours; reheat gently or serve cold as desired.
