Squid

2 pounds Fresh squid

3 tablespoons olive oil

2 cloves Garlic cloves

2 tablespoons ReaLemon lemon juice

1 teaspoon Celtic sea salt

to taste black pepper

Fennel Salad

1 Fennel bulb

1 cup Fresh parsley

1 tablespoon ReaLemon lemon juice

2 tablespoons olive oil

to taste Celtic sea salt

to taste black pepper

Sauce Vierge

1 cup olive oil

1 cup Cherry tomatoes

1 cup Basil leaves

2 tablespoons ReaLemon lemon juice

Method

Preparation

Clean the Squid

Rinse the squid under cold water, remove the insides, and cut into rings.

Prepare the Fennel Salad

Thinly slice the fennel bulb and mix it with chopped parsley, lemon juice, olive oil, salt, and pepper in a bowl.

Make the Sauce Vierge

In a bowl, combine olive oil, halved cherry tomatoes, chopped basil, and lemon juice. Mix well.

Grilling

Marinate the Squid

In a bowl, combine the squid rings with olive oil, minced garlic, lemon juice, salt, and pepper. Let marinate for at least 30 minutes.

Grill the Squid

Preheat the grill to medium-high heat. Grill the squid for about 2-3 minutes on each side or until cooked through and slightly charred.

Assembly

Plate the Dish

Place the grilled squid on a plate, top with the fennel salad, and drizzle with sauce vierge before serving.
