Prepare the Potatoes

Peel the Russet potatoes and cut them into thin strips, about 1/4 inch thick. Rinse the potato strips in cold water to remove excess starch, then pat them dry with a clean kitchen towel.

Soak the Potatoes

Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes to help achieve extra crispiness.

Heat the Oil

In a large heavy pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

First Fry

Carefully add a handful of the soaked potato strips to the hot oil. Fry for about 4-5 minutes or until the potatoes are soft but not browned. Remove them with a slotted spoon and drain on paper towels. Repeat with the remaining potatoes.

Second Fry

Increase the oil temperature to 375°F (190°C). Fry the previously blanched potatoes in batches for an additional 2-3 minutes or until they are golden brown and crispy. Remove and drain on fresh paper towels.

Season and Serve

While still hot, season the fries with salt and pepper to taste. Serve immediately with your favorite dipping sauce.
