Preparing the Soup

Caramelize the Onions

In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 30-40 minutes.

Add Bacon and Garlic

Add the chopped bacon to the pot and cook until crispy. Stir in the minced garlic and cook for another minute until fragrant.

Deglaze and Simmer

Pour in the white wine to deglaze the pot, scraping up any brown bits. Let it reduce for about 5 minutes, then add the beef broth, thyme, bay leaf, salt, and pepper. Bring to a simmer and cook for another 20 minutes.

Assembling and Baking

Prepare the Bread

Preheat your oven to 350°F (175°C). Place the baguette slices on a baking sheet and toast them in the oven for about 10 minutes until slightly golden.

Serve the Soup

Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, top each with a toasted baguette slice, and sprinkle with gruyère and mozzarella cheese.

Gratinée the Soup

Place the bowls under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. Keep a close eye to prevent burning.
