Combine liquids

In a medium saucepan, pour 6 cups fresh-pressed apple cider and 1 cup water. Use a saucepan large enough to avoid boil-over when heated.

Place saucepan over medium heat and bring the liquid just to a gentle simmer (small bubbles at the surface). Do not boil vigorously to preserve fresh apple aromatics.

Sweetening & Balance

Add 3 tablespoons golden brown sugar and 1 tablespoon honey to the simmering cider. Whisk briefly until dissolved.

Stir in 2 tablespoons fresh lemon juice and a pinch of sea salt to brighten and balance the sweetness.

Spices & Aromatics

Lightly crush the 6 cardamom pods and 6 whole cloves with the flat side of a knife to release oils. Keep cinnamon sticks whole, slice the vanilla bean lengthwise (if using), and prepare 1 tablespoon sliced fresh ginger.

Add the cinnamon sticks, crushed cardamom, cloves, 1 star anise, sliced ginger, and the split vanilla bean (or 1 teaspoon vanilla extract) to the simmering cider.

Reduce heat to low and simmer gently, uncovered, for 10–12 minutes to infuse the flavors. Taste at 8 minutes and adjust sweetness or acidity as desired.

If you prefer a clearer cider, use a fine-mesh sieve or cheesecloth later to strain out spices; otherwise leave whole for rustic presentation.

Finish & Serve

Remove the saucepan from heat. Using a fine-mesh sieve, strain the cider into a heatproof pitcher to remove whole spices and ginger (if you left them in). Press gently on solids to extract flavorful liquid but avoid forcing bitter tannins from seeds.

If using vanilla extract instead of the bean, stir it in now. Taste and adjust: add up to 1 more tablespoon honey or 1 tablespoon lemon juice if needed.

For an elevated serving (optional): measure 1 teaspoon calvados or apple brandy into each cup or mug and pour the hot cider over it. Alternatively, stir 4 teaspoons into the whole batch for a gentle boozy note.

Garnish each serving with 1–2 thin apple slices and a lemon peel twist. Serve hot in warmed mugs.

Leftovers: cool to room temperature, refrigerate in a sealed container for up to 3 days. Reheat gently; do not boil.
