Seasoning the Fillets

In a bowl, combine salt, black pepper, and paprika. Rub the seasoning mixture evenly over both sides of the catfish fillets. Let them sit for about 15 minutes to absorb the flavors.

Breading the Fillets

In one shallow bowl, place the cornmeal. In another shallow bowl, combine the all-purpose flour. In a third bowl, whisk together the eggs and milk. First, dip each fillet into the flour, then into the egg mixture, and finally coat with cornmeal.

Frying the Catfish

In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded catfish fillets to the skillet. Cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove and place on a paper towel to drain excess oil.

In a pot of boiling salted water, add the green beans and cook for about 4-5 minutes or until tender but still crisp. Drain and set aside.
