Prepare the Ingredients

Dice the bell pepper, onion, and celery. Mince the garlic. Rinse the crawfish tails and shrimp under cold water and set aside.

Sauté Vegetables

In a large pot, heat the olive oil over medium heat. Add the diced bell pepper, onion, and celery, and sauté for about 5 minutes until the vegetables are softened.

Add Garlic

Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant.

Season the Mixture

Sprinkle in the Cajun seasoning, salt, and black pepper. Stir well to combine all the flavors.

Add Stock and Seafood

Pour in the chicken or seafood stock and bring the mixture to a boil. Once boiling, reduce to a simmer and add the crawfish tails and shrimp.

Cook the Seafood

Let the seafood cook for about 5-7 minutes, or until the shrimp turn pink and opaque. Make sure not to overcook the shrimp.

Serving

Garnish and Serve

Remove the pot from the heat. Serve the crawfish and shrimp in bowls, garnished with sliced green onions and chopped parsley.
