Preheat the oven

Preheat your oven to 425°F (220°C).

Grease the ramekins

Grease four 6-ounce ramekins with butter and dust them with cocoa powder to prevent sticking.

Making the Batter

Melt the butter

In a microwave-safe bowl, melt the unsalted butter until completely liquid. Allow to cool slightly.

Mix dry ingredients

In a separate bowl, whisk together the all-purpose flour, granulated sugar, cocoa powder, baking powder, and salt until combined.

Combine wet ingredients

In the melted butter, whisk in the eggs, egg yolks, and vanilla extract until smooth.

Combine wet and dry mixtures

Gradually add the dry mixture to the wet mixture, stirring until just combined. Do not overmix.

Baking

Fill ramekins

Pour the batter evenly into the prepared ramekins, filling them about 3/4 full.

Bake the cakes

Place the ramekins on a baking sheet and bake in the preheated oven for about 12-14 minutes, or until the edges are firm but the center is soft.

Cool slightly

Remove from the oven and let the cakes cool for about 1 minute.

Serve the lava cakes

Carefully invert each ramekin onto a plate, allowing the cake to release. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream.
