Cooking Pasta

Boil Water

In a large pot, bring water to a boil. Add salt to the boiling water.

Cook Pasta

Add the pasta to the boiling water and cook according to package instructions until al dente. Drain and set aside.

Preparing Vegetables

Chop Vegetables

Dice the zucchini, bell pepper, carrot, and garlic. Halve the cherry tomatoes.

Sauté Vegetables

In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1 minute. Add zucchini, bell pepper, carrot, and cook for about 5-7 minutes or until vegetables are tender.

Making Sauce

Combine Sauce Ingredients

In a small bowl, whisk together lemon juice, black pepper, red pepper flakes, and half of the Parmesan cheese.

Combining Everything

Mix Pasta and Vegetables

Add the cooked pasta to the skillet with the sautéed vegetables. Pour the sauce mixture over the pasta and toss to combine.

Finish with Cheese and Basil

Top with remaining Parmesan cheese and fresh basil. Toss again to combine before serving.
