Crispy fennel

Trim the fennel: remove any tough outer layers, cut off fronds (reserve a few for garnish), then slice the bulb into 1/8–1/4-inch (3–6 mm) thin slices. Pat slices dry with paper towel.

In a shallow bowl combine flour, cornstarch, salt, black pepper, and smoked paprika (if using). Toss the fennel slices in the mixture to lightly coat; shake off excess.

Heat a large nonstick or stainless skillet over medium-high heat and add the vegetable oil. When shimmering, add the fennel slices in a single layer (work in batches if necessary). Fry undisturbed 2–3 minutes per side, until golden and crisp at the edges. Transfer to a paper-towel–lined plate and season immediately with a pinch of salt.

Whipped feta

Combine crumbled feta, softened cream cheese, Greek yogurt, lemon juice, honey (if using), black pepper, and 1 tsp olive oil in a food processor or blender.

Process until very smooth and spreadable, scraping down the sides once or twice. If mixture is too thick, add up to 1–2 tsp water or olive oil to reach a fluffy, pipeable consistency. Transfer to a bowl and chill briefly while you make the pesto or warm the pita.

Mint pesto

Toast the pine nuts or walnuts in a small dry skillet over medium heat, stirring, until fragrant and lightly browned, 2–3 minutes. Let cool slightly.

In a small food processor combine mint leaves, parsley (if using), toasted nuts, garlic clove, lemon zest, lemon juice, salt and pepper. Pulse to a coarse paste, then stream in 3 tbs olive oil until emulsified but still vibrant and slightly textured. Taste and adjust salt/lemon as needed.

Pita & assembly

Warm the pita: brush each pita lightly on both sides with the 2 tbs olive oil. Heat a heavy skillet over medium and warm pitas 1–1.5 minutes per side until pliable and lightly browned (or toast in 400°F / 200°C oven for 3–5 minutes). Keep warm under a towel.

If using plain balsamic vinegar and you prefer a sweeter drizzle, stir 1 tsp honey into the 2 tbs balsamic. Alternatively use a balsamic glaze as-is.

Assemble each pita: spread about 2–3 tbs whipped feta over the center of a warmed pita. Spoon 1–2 tbs mint pesto over the feta, then top with a small handful of the crispy fennel slices (about 1/4 cup). Drizzle 1/2–1 tbs balsamic over the top. Finish with a few reserved mint leaves, a fennel frond if desired, and a crack of black pepper.
