Fried Oyster Mushrooms

Prepare mushrooms

Gently clean oyster mushrooms by wiping them with a damp paper towel or brushing off dirt; avoid rinsing under running water as they absorb moisture. Trim any tough stems and separate into bite-size clusters or leaves, keeping larger pieces intact for texture.

Make the batter

In a medium bowl whisk together 3 tbs all-purpose flour, 1 tbs cornstarch, 1 tsp sea salt, 1/2 tsp black pepper and 1/2 tsp garlic powder. Gradually whisk in 5 tbs cold water until the mixture forms a slightly thick, smooth batter that will cling to the mushrooms. Adjust with a teaspoon more water if too thick; batter should be thin enough to coat but not runny.

Heat oil

Pour 1 cup neutral oil into a wide skillet or shallow pan to a depth of about 1/4–1/3 inch. Heat over medium-high until shimmering and a small drop of batter sizzles and rises immediately (about 350°F or medium-high on stovetop). Maintain a consistent temperature; reduce heat if oil smokes.

Fry mushrooms

Working in a single layer and in batches to avoid crowding, dip each mushroom cluster into the batter to coat, letting excess drip back into the bowl, then carefully place into the hot oil. Fry 2–3 minutes per side until golden and crisp, flipping gently with tongs or a slotted spatula. Remove to a wire rack or paper-towel-lined plate to drain and sprinkle lightly with flaky sea salt while hot. Repeat with remaining mushrooms.

Mushroom Vinaigrette

While mushrooms fry, make the vinaigrette. In a small bowl or jar combine 3 tbs extra-virgin olive oil, 1.5 tbs white wine vinegar, 1 tbs minced shallot, 1/2 tsp Dijon mustard, 1/2 tsp soy sauce, 1/2 tsp honey or maple syrup, 1 tbs fresh lemon juice, and 1 tbs finely chopped cremini or button mushroom (if using). Whisk or shake vigorously until emulsified. Taste and season with 1/4 tsp salt and 1/4 tsp freshly ground black pepper. If the dressing tastes too sharp, add a small pinch more honey or a drop more oil.

Chop 2 tbs flat-leaf parsley and 1 tbs chives finely and zest 1/2 tsp lemon. When all mushrooms are fried and slightly cooled (warm is best), transfer them to a serving platter. Spoon the mushroom vinaigrette lightly over the fried mushrooms (about 1–2 tbs per batch) so they remain crisp but get a bright coating. Scatter the chopped herbs and lemon zest over the top and finish with a light sprinkle of flaky sea salt.

Serve immediately as an appetizer or as a component of a salad or composed plate. Leftover vinaigrette can be refrigerated for up to 3 days; re-crisp mushrooms in a 375°F oven for 5–7 minutes before serving if needed.
