Preparation
Prepare the Ingredients
Chop the green onions finely, separating the green and white parts. Mince the garlic cloves and grate the ginger. If using, dice the cooked chicken or shrimp into bite-sized pieces.
Prepare the Rice
Ensure the cooked white rice is cold and separated to prevent clumping. If using freshly cooked rice, spread it on a baking sheet to cool quickly.
Cooking
Scramble the Eggs
In a large skillet or wok, heat 1 tablespoon of sesame oil over medium heat. Beat the eggs in a bowl, then pour them into the skillet. Stir gently until the eggs are just set. Remove and set aside.
Incorporate Protein and Vegetables
If using chicken or shrimp, add them to the skillet along with the peas (if desired). Stir well to combine and cook for another 2-3 minutes.
Finish with Eggs and Green Onions
Add the scrambled eggs and the white parts of the green onions to the rice. Stir to combine and heat through for another minute. Remove from heat and garnish with the green parts of the green onions.
