In a large pot, combine the whole hen, sliced ginger, water, salt, black peppercorns, crushed garlic cloves, and bay leaves.

Simmer the Broth

Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and cover. Let it simmer for about 1.5 to 2 hours or until the hen is fully cooked and tender.

Remove the Hen

After cooking, carefully remove the hen from the pot and set it aside to cool. Strain the broth through a fine mesh sieve to remove solids, returning the liquid to the pot.

Noodles and Toppings

Cook the Potatoes

Add the cubed yellow potatoes to the strained broth and bring it back to a gentle simmer. Cook the potatoes until they are tender, about 15-20 minutes.

Cook the Noodles

Once the potatoes are tender, add the noodles to the pot. Cook according to the package instructions until the noodles are al dente.

Prepare the Eggs

While the noodles are cooking, boil the eggs in a separate pot of water. Once cooked to your liking (about 8-10 minutes for hard-boiled), remove, cool, peel, and slice.

Shred the Hen

Once the hen is cool enough to handle, shred the meat into bite-sized pieces, discarding the bones and skin.

Assemble the Dish

In serving bowls, add a portion of the noodles and potatoes, then top with shredded hen meat, a sliced egg, and garnish with chopped green onions.
