Method
Fish
Prepare the Mahi Mahi
Rinse the Mahi Mahi fillets under cold water and pat them dry with paper towels.
Season the Fish
In a bowl, combine the salt, black pepper, and lemon juice. Rub this mixture over the fillets evenly.
Dredge in Flour
Spread the all-purpose flour on a plate. Dredge each seasoned fillet in the flour, ensuring they are coated evenly on both sides.
Fry the Fish
Heat vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the coated fillets and fry for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.
Rice
Rinse the Rice
In a fine-mesh strainer, rinse the long-grain white rice under cold water until the water runs clear.
Cook the Rice
In a saucepan, combine the rinsed rice, water, and salt. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for about 18-20 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.
