Method

Prepare the Noodles

Soak the Glass Noodles

In a medium bowl, pour 500 ml of water over the 100 grams of glass noodles. Let them soak for about 15-20 minutes until they become soft and translucent.

Prepare the Vegetables

Chop the Vegetables

While the noodles are soaking, chop the carrot, bell pepper, and cabbage into thin strips. Slice the green onions into small pieces, separating the white and green parts.

Prepare the Sauce

Mix the Sauce

In a small bowl, combine 3 tablespoons of soy sauce, 1 tablespoon of sesame oil, minced garlic (2 cloves), and 1 teaspoon of chili flakes. Stir well and set aside.

Cook the Dish

Stir-Fry the Vegetables

In a large pan or wok, heat a little oil over medium heat. Add the white parts of the green onion and sauté for 1 minute. Add the chopped carrot, bell pepper, and cabbage. Stir-fry for about 4-5 minutes until the vegetables are tender.

Add the Noodles and Sauce

Drain the soaked glass noodles and add them to the pan with the vegetables. Pour the prepared sauce over the noodles and toss everything together. Cook for another 2-3 minutes until everything is heated through.

Add Tofu (if using)

If you are adding tofu, cube the 100 grams and add it to the pan during the last minute of cooking, gently tossing to combine.

Serve

Plate the Glass Noodles

Once cooked, remove from heat and plate the glass noodles. Garnish with the green parts of the green onions and serve hot.
