Prepare and cook lobsters

Bring a large pot of salted water to a rolling boil. Add live lobsters headfirst and cook 8–10 minutes until shells are bright red and meat is cooked. Remove lobsters and cool enough to handle. Reserve 1 cup of cooked lobster meat by extracting tail and knuckle meat; chill and set aside for the bisque. Crack remaining shells (claws, tails, bodies) and collect any tomalley/roe if present; keep coral separate if using.

Roast shells and vegetables

In a large heavy pot or Dutch oven, melt 4 tbs butter over medium-high heat. Add cracked lobster shells and roast, stirring occasionally, until shells take on a deeper red and aromatic (4–6 minutes). Add chopped carrots, celery, and quartered onion; cook 6–8 minutes until vegetables begin to brown, stirring to coat with butter and shells.

Build the stock

Stir in tomato paste and cook 2 minutes to caramelize. Pour in white wine and deglaze, scraping browned bits from the bottom; reduce by half (about 3–4 minutes). Add water, bay leaves, peppercorns, thyme, and 1 tablespoon kosher salt. Bring to a simmer, reduce heat to low and simmer, uncovered, 30–45 minutes to extract flavor from shells and vegetables.

Strain the stock

Using a fine-mesh sieve or chinois, strain the stock into a clean pot, pressing solids to extract liquid. Discard shells and solids. Return strained stock to medium heat and skim any foam or excess fat from the surface. Taste and adjust seasoning—add a pinch more salt if necessary.

For the bisque and garnish

Sauté aromatics

In a separate heavy-bottomed pot, melt 3 tbs butter over medium heat. Add minced shallots and cook 2–3 minutes until translucent. Add garlic and cook 30 seconds until fragrant.

Make a roux

Sprinkle in the flour and stir constantly for 2–3 minutes to form a light roux, cooking off the raw flour taste but not letting it brown too much.

Combine with lobster stock

Slowly whisk in about 2 cups of the warm strained lobster stock to the roux to form a smooth slurry. Once smooth, gradually whisk in the remaining stock to incorporate fully. Bring to a gentle simmer and cook 8–10 minutes so the soup thickens slightly.

Enrich the bisque

Stir in heavy cream and whole milk; simmer 3–4 minutes more on low heat (do not boil vigorously). Add sherry or cognac, tomato concassé (or crushed tomatoes), paprika, cayenne, lemon juice, optional lobster coral or fat, and the reserved lobster meat. Simmer 2–3 minutes to heat the lobster meat through and meld flavors.

Finish and purée

If you prefer a silky bisque, use an immersion blender to purée the soup until smooth directly in the pot (remove thyme stems and bay leaves first). For an extra-smooth finish, pass the puréed bisque through a fine-mesh sieve or chinois, pressing to extract body and smooth texture.

Season and serve

Return the strained bisque to a gentle heat, taste and adjust seasoning with salt and fresh ground black pepper. Stir in chopped chives. Ladle into warmed bowls and garnish with a drizzle of heavy cream, a few reserved lobster pieces, a sprinkle of paprika, and additional chives. Serve immediately.
