Chill glass

Place a champagne flute or coupe in the freezer for 5–10 minutes or fill it with ice water while you prepare the drink to ensure the cocktail stays cold.

Build base

In a mixing glass or small pitcher over ice, combine 2 tablespoons Aperol and 2 ounces fresh orange juice. If you prefer a slightly sweeter Sprimosa, add 1 teaspoon simple syrup. Stir gently for 10 seconds to combine and chill.

Add sparkling wine

Strain the Aperol-orange mixture into the chilled flute (discard the ice water if used). Slowly top with 4 ounces chilled Cava, pouring gently down the side of the glass to preserve bubbles and avoid foaming over.

Final touches & garnish

Give the drink one gentle stir (1–2 turns) to integrate without losing effervescence. Garnish with an orange slice on the rim or a thin orange twist dropped into the drink.

Serve

Serve immediately while cold and effervescent. Provide a small napkin or coaster to catch condensation.
