Cocktail Preparation

Juice and measure

Cold-press or squeeze fresh ruby grapefruit and lemon to yield the required juice. Measure out Beefeater gin, Amaro Montenegro, grapefruit juice, lemon juice and simple syrup.

Shake

Fill a cocktail shaker with ice. Add gin (1.5 oz), Amaro Montenegro (0.5 oz), ruby grapefruit juice (1 oz), lemon juice (0.25 oz) and simple syrup (0.25 oz). Optional: add 2 dashes grapefruit bitters if using. Cap and shake vigorously for 10–15 seconds until well-chilled and slightly diluted.

Strain into glass

Double-strain the shaken mixture into a chilled coupe or a stemmed wine glass (or a rocks glass with fresh ice, if preferred). Use a fine mesh strainer to remove pulp and small ice chips for a smooth finish.

Top & Finish

Top with sparkling wine

Carefully top the strained cocktail with about 2 oz of chilled brut sparkling wine. Pour slowly down the side of the glass to preserve effervescence.

Garnish

Express a grapefruit twist over the cocktail to release oils and rub the rim with it, then drop the twist or a thin wheel into the drink as garnish.

Serve

Serve immediately while the sparkling wine is bubbly. The finished Ruby Soho balances bright ruby grapefruit, floral citrus from gin, and the gentle herbal-mandarin bitterness of Montenegro.
