Prepare chicken

If breasts are thick, butterfly them or pound to about 3/4-inch thickness for even cooking. Pat dry with paper towels.

Season both sides of the chicken breasts with 1 tsp kosher salt, 1/2 tsp black pepper, and 1/2 tsp garlic powder.

Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering.

Add the chicken and cook 4–6 minutes per side (depending on thickness) until an internal temperature of 165°F (74°C) is reached and the exterior is golden. Remove chicken to a plate and tent loosely with foil to rest 5 minutes.

Cook bacon

While chicken rests, in the same skillet or a separate pan, add bacon slices and cook over medium heat until crisp, 6–8 minutes, turning occasionally. Transfer bacon to a paper towel-lined plate to drain. Reserve 1 tablespoon bacon fat in the pan for flavor (optional) or discard excess.

Toast buns

Split brioche buns and spread a thin layer of unsalted butter on cut sides. Return skillet to medium heat (use reserved bacon fat plus butter for extra flavor) and toast cut sides until golden, about 1–2 minutes. Remove and set aside.

Assemble sandwiches

Slice the rested chicken crosswise to fit buns. On bottom bun place a handful (about 1 cup) of baby spinach, top with sliced chicken, 3 slices of cooked bacon, 3 oz (about half) of brie (thinly sliced or torn), and 2–3 tomato slices. Top with the bun crown.

If you prefer melted brie, return assembled open-faced sandwiches (without top bun) to the warm skillet, cover with a lid for 1–2 minutes until brie softens, then close and serve.

Honey Mustard (on the side)

In a small bowl combine 3 tablespoons mayonnaise, 1 tablespoon Dijon mustard, 1.5 tablespoons honey, 1/2 teaspoon apple cider vinegar, 1/4 teaspoon salt, and 1/8 teaspoon black pepper.

Whisk until smooth and taste; adjust honey or vinegar to reach desired sweetness/tang. Transfer to a small ramekin and serve alongside sandwiches.
