Mousse Base
Bloom gelatin
Sprinkle gelatin over cold water in a small bowl and let it sit for 5 minutes to bloom.
Warm gelatin
After blooming, gently heat the gelatin mixture for 10–15 seconds in the microwave or over a double boiler just until it becomes liquid (do not boil). Set aside to cool slightly but keep fluid.
Whisk yolks and sugar
In a medium heatproof bowl, whisk the egg yolks and granulated sugar together until smooth and slightly pale, about 1–2 minutes.
Cook with lime (tempering)
Combine key lime juice and lime zest in a small saucepan and warm over medium-low heat until just steaming (do not boil). Slowly whisk about 1/3 of the warm lime juice into the yolk-sugar mixture to temper the eggs, then return the tempered yolk mixture to the saucepan with the remaining lime juice.
Thicken slightly
Cook the lime-yolk mixture over low heat, stirring constantly with a silicone spatula, until it thickens slightly and reaches a light custard consistency (it should coat the spatula) — about 3–5 minutes. Do not boil to avoid scrambling the eggs.
Whipped Cream Fold

In a chilled mixing bowl, combine chilled heavy cream, powdered sugar, and vanilla extract. Whip on medium-high speed until soft peaks form — the cream should be airy and hold gentle peaks but still be pliable for folding (about 2–3 minutes).
Fold together
Gently fold one-third of the whipped cream into the cooled lime custard to lighten it, using a rubber spatula and large, sweeping motions. Then fold in the remaining whipped cream in two additions until fully incorporated and the mixture is uniform and airy. Avoid overmixing to keep mousse light and fluffy.
Chill to set
Spoon or pipe the mousse into serving dishes or a large bowl. Cover and refrigerate for at least 2 hours, preferably 3–4 hours, until set but still spoonable. The gelatin will give a light, stable set while the whipped cream keeps it fluffy.
Optional Garnish
Just before serving, sprinkle toasted graham cracker crumbs over each portion, add a little extra lime zest or a thin lime slice and a mint leaf for color and aroma. Serve chilled.
