Measure and combine

Chill a coupe or martini glass in the freezer or fill it with ice water to chill while you prepare the cocktail. In a cocktail shaker, add 2 oz London dry gin, 0.5 oz dry vermouth, 0.5 oz elderflower liqueur, 0.5 oz fresh lemon juice, 0.25 oz apricot brandy, and 0.25 oz simple syrup.

Add ice and bitters

Fill the shaker about two-thirds full with fresh ice. Add 1 dash of bitters. This adds depth and ties the floral and fruit notes together.

Shake

Secure the shaker lid and shake vigorously for 12–15 seconds, until the outside of the shaker feels very cold and properly diluted (you should see some frost). The lemon juice requires a firm shake to integrate.

Strain & Finish

Double strain into glass

Discard the ice (or empty the ice water) from the chilled coupe. Double-strain the shaken cocktail into the chilled glass through a fine mesh strainer to remove any tiny shards of ice and lemon pulp for a silky finish.

Top with sparkling wine

Carefully top the strained cocktail with 2 oz chilled Champagne or dry sparkling wine. Pour gently to preserve bubbles and avoid foaming over.

Garnish and serve

Express a lemon twist over the surface of the drink to release the oils, then either drop it in or rest it on the rim. Alternatively, float a small edible flower for an elegant presentation. Serve immediately while sparkling.
