Preparation

Prepare the Vegetables

Dice the red onion, finely chop the jalapeños (removing seeds if less heat is desired), and chop the red bell pepper into small pieces.

Prepare Corn

If using fresh corn, husk and remove the kernels from the cob. You should have about 4 cups of corn kernels.

Cooking

Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the diced red onion and sauté for about 3-4 minutes until translucent. Then, add the chopped jalapeños and red bell pepper, and continue to sauté for another 3-4 minutes.

Add Corn and Seasonings

Stir in the corn kernels, salt, black pepper, garlic powder, and cayenne pepper. Cook for about 5 minutes until the corn is heated through.

Make Cream Sauce

Reduce the heat to low. Add the heavy cream and cream cheese to the skillet. Stir continuously until the cream cheese is melted and the mixture is well combined.

Add Parmesan Cheese

Stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning with additional salt and pepper if needed.

Serve

Remove from heat and transfer to a serving dish. Enjoy hot as a delicious side dish!
