Wash and Slice the Potatoes

Thoroughly wash the Russet potatoes under cold water. Using a mandoline slicer or a sharp knife, slice the potatoes thinly (about 1/8 inch thick).

Soak the Potato Slices

Place the potato slices in a large bowl of cold water and soak for at least 30 minutes to remove excess starch. This helps the chips become crispier.

Drain and Dry the Potatoes

After soaking, drain the potatoes and lay them out on a clean kitchen towel or paper towels. Pat them dry to remove as much moisture as possible.

Heat the Oil

In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potato Slices

Carefully add a handful of potato slices to the hot oil, ensuring not to overcrowd the pot. Fry for about 3-4 minutes, or until golden brown and crispy.

Remove and Drain

Using a slotted spoon, remove the fried potato chips from the oil and transfer them to a plate lined with paper towels to drain excess oil.

Season the Chips

While the chips are still hot, sprinkle with sea salt, black pepper, paprika, and garlic powder to taste. Toss gently to ensure even coating.
