Potatoes Preparation

Boil the Potatoes

Peel and chop the russet potatoes into evenly sized chunks. Place them in a large pot and cover with cold water. Add 1 tsp of salt. Bring to a boil over medium-high heat and cook until the potatoes are fork-tender, about 15-20 minutes.

Mash the Potatoes

Once the potatoes are cooked, drain them and return them to the pot. Add 4 tbsp of unsalted butter, 1 cup of heavy cream, and 1 tbsp of truffle oil. Mash the mixture until creamy and smooth. Stir in the shredded smoked Gouda cheese until well incorporated.

Prepare the Crab Mixture

In a medium bowl, gently combine 1 cup of blue lump crab meat, 1 tbsp of lemon juice, 2 tbsp of chopped fresh chives, and 1 tsp of black pepper. Mix carefully to avoid breaking the crab meat.

Assemble the Dish

Spoon the truffled mashed potatoes onto plates or into bowls. Top each serving with a generous portion of the crab mixture.

Sprinkle with 1 tbsp of chopped fresh chives and drizzle with 1 tsp of truffle oil for an extra touch of flavor.
