Prepare Hummus

In a food processor, combine 1 cup of chickpeas, 1/4 cup tahini, juice of 1 lemon, 2 cloves of garlic, and salt to taste. Blend until smooth, adding water as needed to reach desired consistency.

Prepare Tzatziki

Grate 1 large cucumber and squeeze out excess moisture. In a bowl, mix the cucumber with 1 cup of Greek yogurt, 1 clove minced garlic, 1 tablespoon olive oil, and salt to taste. Chill before serving.

Prepare Baba Ganoush

Roast 1 eggplant until soft. Scoop out the flesh and combine with 1/4 cup tahini, juice of 1 lemon, 2 cloves of garlic, and salt. Blend until smooth and adjust seasoning to taste.

Crudités

Prepare Vegetables

Wash and slice the cucumber into sticks, peel and cut the carrots into sticks, deseed and cut the bell pepper into strips, and wash the radishes. Arrange all vegetables on a platter.

Dolmas

Prepare Dolmas Filling

In a bowl, mix 1 cup cooked rice, 1 tablespoon pine nuts, 1 tablespoon chopped fresh dill, and 2 tablespoons lemon juice. Season with salt and pepper.

Stuff Grape Leaves

Lay a grape leaf flat, place a spoonful of filling at the base, fold in the sides, and roll tightly. Repeat until all leaves are stuffed.

Serve Olives

Drain and rinse the mixed olives, then place them in a small bowl for serving.

Sourdough Pita

Warm Pita

Warm the sourdough pita bread in a toaster or on a skillet until lightly toasted. Cut into wedges for serving.
