Method

Preparing the Kataifi

Preheat Oven

Preheat your oven to 180°C (350°F).

Prepare Kataifi

Melt the unsalted butter and mix it with the kataifi dough in a bowl until the dough is well coated.

Add Pistachios

Fold in the finely chopped pistachios into the kataifi mixture.

Bake Kataifi

Spread the kataifi mixture evenly in a baking dish and bake in the preheated oven for 25-30 minutes or until golden brown.

Making the Chocolate Cremeux

Heat Cream

In a saucepan, heat the heavy cream over medium heat until it just begins to simmer.

Mix Egg Yolks and Sugar

In a bowl, whisk together the egg yolks and sugar until well combined.

Combine Mixtures

Slowly pour the hot cream into the egg yolk mixture while whisking constantly to temper the eggs.

Cook the Mixture

Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens enough to coat the back of a spoon.

Add Chocolate

Remove from heat and add the dark chocolate, stirring until fully melted and smooth.

In a small saucepan, combine honey, water, and lemon juice.

Heat Syrup

Bring to a simmer over low heat, stirring until the honey is completely dissolved. Set aside to cool.

Making the Vanilla Chantilly

In a mixing bowl, whip the heavy cream until soft peaks form.

Gradually add powdered sugar and vanilla extract while continuing to whip until stiff peaks form.

Assembling the Dessert

Once the kataifi is baked and cooled, layer it on a serving plate.

Spread a layer of chocolate cremeux over the kataifi.

Drizzle the cooled honey syrup over the chocolate layer.
