Preheat the Oven

Preheat your oven to 200°C (400°F) to prepare for roasting the tomatoes.

Prepare the Tomatoes

Wash the cherry tomatoes and cut them in half. Place them in a mixing bowl.

Season the Tomatoes

Add olive oil, salt, black pepper, and fresh thyme leaves to the bowl with the halved tomatoes. Toss to coat evenly.

Arrange on Baking Sheet

Spread the seasoned tomatoes on a baking sheet lined with parchment paper, cut side up.

Roasting and Serving

Roast the Tomatoes

Place the baking sheet in the preheated oven and roast the tomatoes for about 20-25 minutes, or until they are blistered and caramelized.

Prepare the Feta

While the tomatoes are roasting, crumble the Valbreso feta cheese into a serving bowl.

Drizzle Honey

Once the tomatoes are done roasting, remove them from the oven and drizzle with honey while they are still warm.
